This is the last bowl of the series. Next week I'll be starting a new series and I'm thinking everything wraps!
This week's recipe is super easy and I think it might be my favorite. I love garlic and there is lots of it in this recipe.
Prep all of the food at the beginning of the week and enjoy the leftovers during the week. Just throw the bowl together, heat it up, and enjoy a delicious, healthy, plant-based meal in 5 minutes!
Let's get started.
Serving Size - 3 Cook time - 30 min
For the tofu:
1 15oz block of organic tofu
1 tbs cornstarch
1 tsp sea salt
1/2 tsp garlic powder
1/8 tsp cayenne pepper
For the rice:1 cup of brown rice, cooked
For the Broccoli:
1 small head of broccoli cut into bite-size pieces, steamed
For the Sauce:
1/4 cup of coconut aminos or tamari
3 tbs extra virgin olive oil
2 tbs maple syrup
2 garlic cloves, minced
1 inch of ginger, grated or diced.
For the tofu:
Preheat oven to 400 degrees.
Remove tofu from package, drain and press dry between towels to remove the water.
Cut into small 1/2 in. squares and toss with the cornstarch, salt, garlic, and cayenne pepper.
Place on a baking sheet covered with parchment paper and bake for 15 min. flip over and bake another 15 minutes or until golden brown.
Remove from the oven and set aside.
For the sauce:
Place all ingredients into a bowl and mix together.
To assemble the bowls:
Divide the ingredients into 3 equal parts and put them into bowls. Keep the sauce separate until serving.
